Although scientists and agribusiness have started touting edible insects as the future of sustainable food, the notion of eating bugs hasn’t exactly gained much popularity among the general public. Head Chef Ben Reade and Lead Researcher Josh Evans from the Nordic Food Lab in Denmark are looking to change that. With a focus on food diversity and deliciousness, they set out on a globe-trotting mission to take on the politics of the palate, sampling grubs in the Australian outback, pillaging giant wasp nests in Japan and attending food expos where entrepreneurs pitch their flavorless farmed crickets. Along the way, they put their own haute cuisine spin on local insect delicacies, whipping up dishes like cricket and grasshopper ravioli, maggot cheese gelato and bee larva ceviche.

How Healthy Is Our Bread?(de)

More and more people are suffering from wheat and gluten intolerance. Wheat protein was long considered to be the cause of this scourge, and today gluten free products are on all the supermarket shelves. However, there is now increasing suspicion that it is not wheat but how it is processed that makes bread a potentially unhealthy food. Industrial processes simply do not give bread enough time to mature. More and more bakeries are reacting to this by introducing former production methods and ingredients such as champagne rye, emmer or in vogue chia seeds. Bread is baked according to old recipes, sometimes using home grown and home milled grains.

A look at the world of genetically modified foods through the lens of New Mexico's iconic chile pepper. The Chile pepper defines New Mexican cuisine and is considered a sacred plant by many cultures. Despite overwhelming evidence of gene flow, persistent safety questions, predatory multinational agribusiness corporations and potential economic damage, the State of New Mexico funded research to produce a GMO chile. It was the first time a state government directly targeted a crop for genetic modification. Because the funding is public, we were able to force a rare interview with a genetic researcher at NMSU. This film is packed with information about the harmful use of GMO technology and the ignorance shown by the proponents of GMO crops.
